LG’s CHICKEN BACON JALAPENO HOAGIES

As usual, I was inspired by my trip to Starbucks. No, it wasn’t the piping hot Pike with extra cream (yum), but their lunch menu! They have a chicken and bacon panini that’s my go-to when I’m driving thru for a bite.

Even though I’m all about one-pot meals, I was ready to switch gears and have something a little lighter and lunchier for supper. I love simple but inspired meals.

I have no idea what kind of spread they use on the Starbucks sandwiches, so I decided to just dream up something that would go well with chicken and bacon, which wasn’t that difficult. And I have to admit, the result was really good. Thanks Starbs.

 

CHICKEN BACON JALAPENO HOAGIES –

 

INGREDIENTS:

  • 1 Rotisserie Chicken

  • Bacon (2 slices per sandwich)

  • Sliced Provolone Cheese

  • Your choice of Hoagies, Sub Rolls, French Bread, or Baguettes 

  • 4 oz. Spreadable Cream Cheese (approx. 1/3 of the 12 oz. container)

  • 1 heaping Tablespoon Mayonnaise 

  • A handful of mild Jalapeño Peppers (I like the Mezzetta tamed kind)

  • Spices – garlic salt, black pepper, Lawry’s seasoning salt

INSTRUCTIONS:

  • Line baking sheet with aluminum foil.

  • Cut bacon slices in half and and arrange each half on the baking sheet slightly overlapping each other (see above picture).

  • Place bacon in oven and heat to 375 degrees, baking for 15-20 minutes. (No preheating)

  • Flip bacon and cook another 5-10 minutes depending on how crispy you like it. I like this baking method, but you can obviously fry your bacon if you prefer. 

While bacon is baking…

  • Tear apart rotisserie chicken into smallish pieces and set aside. 

  • In a small bowl, mix together the mayonnaise, cream cheese, and about 1/2 teaspoon garlic salt.

  • Dice jalapeños and mix into cream cheese mixture. Add more or fewer depending on how tough you are.

(You could always just add the peppers to select sandwiches and leave off of others, if kiddos aren’t keen on jalapeños!)

This is reminiscent of Frank & Lola’s Johnny Burger spread.. yum. I wish I had that recipe.

 

  • Remove bacon and let drain on a plate of paper towels.

  • Lightly butter tops & bottoms of hoagie buns and place butter-side-up onto a clean baking sheet.

  • Lightly toast under a low broiler just a few minutes.

  • Remove buns from the oven & spread a healthy layer of cream cheese mixture on bottom bun.

  • Now start piling on the chicken and season with Lawry’s seasoning salt and black pepper.

  • Top with bacon and provolone cheese (2 slices per sandwich).

  • Return hoagie bottom halves under the low broiler until cheese is melty and a little toasty.

  • Remove from oven and top with other hoagie halves.

  • Cut in half and serve with your favorite sandwich sides. Ours are mac & cheese and jalapeño kettle chips!

Any extra cream cheese mix can be added to the top half or to pretty much any leftovers to spice it up. 

This savory, spicy, bacony sandwich is definitely one of my new favorites.
